apple cinnamon bread pudding

Altering dishes to make them your own is a gift that all great chefs possess. For this dish I took the basic premise of a traditional bread pudding and made it my own. No raisins in my bread pudding! The end result should be a super moist and springy cake like bread.

6 slices of bread (day old or you can lightly broil them to eliminate moisture)
1 1/2 cups of milk
3 eggs
2 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla
1/4 cup brown sugar
1 apple
1 tsp granulated sugar
1/4 cup of shredded coconut

1. Tear the bread into small pieces and place into a bowl
2. Peel and cut a large apple into small pieces and combine with 1 tsp of cinnamon and 1 tsp of granulated sugar – Microwave for 45 seconds
3. In a separate bowl whisk together milk, eggs, brown sugar, coconut, cinnamon, vanilla and nutmeg
4. Mix together the bread and wet mixture
5. Place half of the bread and egg mixture into a glass baking pan
6. On top of the the bread place 3/4 of the warm apples
7. Place the rest of the bread on top and cover with the remaining apples
8. Bake on 350 degrees for 35-40 minutes

Serves: 3-4 people
