Good morning! I have another egg photo for you all!

This mornings breakfast was pork and fried eggs on a bed of cooked spinach.

Pork and Fried Eggs

2 leftover pork chops (bone removed)
1 cup of raw or cooked spinach
2 fried eggs
salt and pepper to taste
1. Reheat pork
2. simmer raw spinach in 1 tsp of olive oil until cooked
3. in a separate pan fry eggs
4. combine on a plate and enjoy.

I also have a photo from last nights lunch/dinner, linner if you will, (day 5). Breakfast was fruit/eggs/etc, nothing to write home about. But linner was great! Curry is probably my favorite food of all time. I don’t make it as good as Chakara or any other restaurant, but I’ll keep trying. This recipe is a little high in fat for those who are concerned. The main fat source is the rich and creamy coconut milk. You can substitute the coconut milk, but then it just won’t be the same.

Red Curry 

2 cubed chicken breasts (About 1 1/2 – 2 cups)
2 large carrots (diced)
3. 1 large sweet potato (diced)4. 1 large onion (wedged)
3/4 to 1 can of coconut milk (you can use less if you want, just enough to cover the chicken, the more coconut milk you use, the more curry paste you will need to balance the coconut flavor. And the more coconut milk you use the more delicious curry sauce you get to enjoy.)1/4 cup of water (to thin out the coconut milk)
2 -3 tbsp curry paste
2 tsp mild yellow curry powder
1. After dicing, cubing, and wedging all ingredients, place in a crockpot to simmer for 4-5 hours (on low)

Day 6: Dinner on the Fly: Walnut and Almond Crusted Chicken with Avocado 

1 lb chicken breasts
1 avocado (sliced)
1/4 cup crushed walnuts
1/4 cup crusted almonds
1 egg
1 tbsp olive oil
1 tsp italian seasoning
1 tsp parsley
1 tsp cilantro
Your choice of salsa (for a topping)
1. Dip chicken breast in egg, coast heavily, dip into nut mixture
2. Grill chicken breast in olive oil until done
3. Serve chicken atop sliced avocado and salsa
