Another new twist on a Ani Phyo dish. I took Ani’s peach cobbler and pistachio recipe and added walnuts, apples and raisins to create my own decadent dessert.
1 apple, diced or sliced
1 peach/1 can of peaches, diced or sliced
1/2 pitted dates
1/4 cup raisins
1/2 cup shelled pistachios
1/4 cup walnuts
1/4 tsp salt
1/2 tsp vanilla
1. Combine apples, vanilla and peaches. Place inside a baking dish.
2. In a food processor combine dates, raisins, pistachios, walnuts and salt. Blend until dough begins sticking together.
3. On a piece of parchment paper roll out dough to 1/4″ thickness. Trim to fit inside the baking dish.
4. Place dough over peach and apple mixture. Bake 375 degrees for 20 minutes.
The hot and lightly toasted salty crust layered on top of the warm and sweet fruit was the perfect comfort food. This will most likely be one of the last desserts I will make for the rest of the diet. It’s not much of a diet, if I keep finding a way to cheat. But this gloomy weather makes comfort foods irresistible. Good thing I have the treadmill to keep me in line!
