Raw and Vegan cookies!!!

These no bake, no hassle, no sugar added cookies are the perfect partner to a tall glass of almond milk and taste great as a cool summer snack straight out of the freezer. All you need for this tasty treat is a food processor and a few sheets of wax/parchment paper.

The two batches of cookies I made are carob almond and banana walnut. Inspired by the minimal ingredient Lara bars, both recipes use fresh whole ingredients with no preservatives. Medjool dates serve as a base while almonds, walnuts, pistachios and cashews can be alternated according to specific tastes.

Carob Almond
3-4 Medjool dates (seeds out)
1/4 cup almonds
1/4 pistachios
1/4 cup raisins
2 -3 tbsp carob powder (cocoa can be substituted, but it will be a little more bitter)

Banana Walnut
3-4 Medjool dates (seeds out)
1/4 cup walnuts
1/4 cashews
1/4 cup raisins
2-3 slices of banana

Directions (For Both Recipes)
Place all ingredients into a food processor. Blend for 30sec – 1min (depending on the strength of your processor). You will want to blend until the ingredients begin to stick together, there should be petite pieces of nuts. Do not blend until smooth. Roll the dough into small 1tbsp balls. Place the balls onto parchment paper and cover with another sheet of parchment. With a rolling-pin or any flat object press the balls into flat spheres. Place the cookies into the freezer for 20-30  minutes then transfer for storage into the fridge. They should keep for 4-5 days.

**NOTE: the banana cookies may need more walnuts since they will be more pliable from the gooey bananas!
