laura’s protein pancakes

Since Sunday, Steve and I have been attempting a new low carb, high protein, and veggie diet. We have also been tracking our calories with the My Fitness Pal app as well as weighing ourselves on Wii Fit! My attempt is to stay between the 1200-1350 range and his is well into the 1800’s. We are doing this not only our health but our labor day trip to VEGAS!!! I know, Vegas, a superficial reason to look good, but if it gets us motivated then why not?

Our breakfast consists of mainly egg whites, yogurt or oats but they get repetitive fast and the weekends are our time to enjoy things like pancakes and croissants (today is Wednesday, but its our weekend since its 4th of July!)


I have tried many protein pancake recipes before but the are so dense and thick and taste a lot like cardboard that I can’t bring myself to make them again. Today, I attempted to enjoy our “weekend” breakfast and create my own protein pancake recipe.

Protein Pancakes

1/2 cup oats (grind in food processor)
1/4 cup millers unprocessed wheat bran
1 scoop pure protein whey protein
2 egg whites
1/2 cup unsweetened vanilla almond milk


In the end they are still a little dense, but they have a nice vanilla taste and I would make them again with maybe almond flour and definitely some baking powder to help them rise! Top with some raspberries and a little agave nectar or light syrup and enjoy!

Here is the caloric breakdown of these cute little cakes:

Yield: Approx 8 – 2″ pancakes
Total Calories: 392
Fat: 7.3g
Carb: 41g
Fiber: 10.5g
Sugar: 3g
Protein: 41.5g

Serve with a side of Festive greek yogurt with raspberries and blueberries!

  1. hmm, I was wondering what I should have for breakfast 🙂 Although, I’m pretty sure I don’t have all of those ingredients.
