Double whammy blogging for today! Happy 4th of July! Celebrating our troops and America the best way we can, with lots of high calorie food that screams U-S-A!

After unsuccessfully searching for pound cake, I had to save my idea for strawberry and blueberry pound cake towers for next year 😦 But I found something just as good to make, white chocolate covered strawberries!

Ingredients:

1 bag of white chocolate chips

1lb fresh strawberries

3-4 drops blue food coloring

To melt the chips, fill an a pot fill with 1/4 cup of water, place a glass bowl inside, use less water if the glass bowl touches the water. The glass bowl should be hovering over the water. Bring the water to a simmer and place the chocolate chips in the glass bowl. Stir constantly, until the chips are melted into a smooth texture. Repeat the same process with less chips and mix in 3-4 drops of blue food coloring.

Clean the strawberries with water and dry with a paper towel. Dip the strawberries into the white chocolate 3/4 of the way, spin slightly to remove excess chocolate. Then dip the strawberries directly into the blue white chocolate, approx. 1/4 the way up. Place the berries on wax paper and into the fridge for 15-20 minutes.

If you have leftover chocolate you can make the ultimate fat kid snack, white chocolate covered potato chips!
