protein peanut butter and chocolate chip cookie sandwiches

I wanted a chocolate chip cookie. Then again, I wanted something with subsistence, something with protein to keep me full and not make me feel guilty. The answer was protein peanut butter and chocolate chip cookie sandwiches. Quite a mouthful!

1 scoop of vanilla whey protein
1/4 cup of flour or finely ground oats
1 large egg
1 tbsp chocolate chips
2-3 tbsp almond milk or water
1 tiny pinch of salt
1 tsp brown sugar
2 tbsp peanut butter

Very simply, I mixed together all of the above ingredients except for the peanut butter. If the batter it too runny, add a little more flour, if its too thick add a little more almond milk.

Place small dollops onto a greased baking sheet. Bake for approx. 10-12 minutes at 350 degrees. Once the cookies are brown on the edges promptly remove and place on a cooling sheet.

Place a spoonful of peanut butter in between two cookies and enjoy! Quick, simple, and high protein cookies to curve your cookie attack!

Yield: 6 cookies/3 sandwiches

  1. One tablespoon of chocolate chips? What is that, 12??? Maybe mini chips? Never quite sure where you come up with these recipes because lots of them have ingredients I’ve never heard of much less have in my cupboards, but they certainly look good!
